Mark is a bacon lover. We made this for his birthday, which falls on Christmas! The bacon smoking outside made the neighbors jealous when they smelled our bacon explosion.
Ingredients
- 1 lb thick cut bacon
- 1 lb sweet Italian sausage
- Dry Rub (we used Cabela's sweet rib rub)
- toppings if you are feeling feisty (cheese, peppers, onions, etc.)
Method
Step 1
Set smoker to 225 (we used hickory chips). If your smoker takes water, put water in the pan.
Step 2
Make a bacon lattice (5x5) weave, sprinkle on some dry rub then smash Italian sausage to make an even layer covering the lattice, then and add some more rub.
Step 3
Add toppings if you want or leave as is and roll up. Use toothpicks to secure all edges.
Step 4
Put in smoker for 3 hours or until internal temp reaches 165. We decided we could have smoked it longer to get the bacon crispier.
